Quality and safety of food used

"Quality" has always  a natural origin, it derives from ingredients obtained trough human intervention in dedicated territories: their exclusive use is an integral part of my professionalism. I ask my suppliers a list of quality requirements, checking the high quality and excellence of raw materials employed, preferring certified products origin, such as DOP - Protected Designation of Origin, IGP - Protected Geographical Indication, STG - Traditional Speciality Guaranteed, Consortium protection if any, to guarantee food products used.

I use only organic food,  obtained by adopting appropriate cultivation techniques, and without the use of synthetic chemicals, such as fertilizers, pesticides, herbicides, O.M.G. products, etc., allowing only natural fertilizers such as manure, plants extract, insects and pesticides.

The industrial process alone can not  ensure the safety of food products: the responsibility for the safety and quality of food must be shared by all those involved in the food chain: producers, transporters, retailers.

In addition to being good and genuine, my semi-finished are ready and easy to use, ensuring my customers about safety so that, they can devote the time saved for other stages of preparation, with advantages both in quality and quantity. I said no to hydrogenated fats, which are widely used in our sector. It is not part of my philosophy to create products not in tune with the new eating habits oriented towards Balanced Diet.

Using selected meats

Pork - Sicilian Black Pig

My suppliers, as indicated, the black pig is breeded in the wild controlled (type plein air) in large pens and forests, within which the 'supply generally based on the pasture is supplemented with food of biological origin.

The Sicilian Black Pig, traditionally called "u Puorcu Niuro" is an indigenous animal originated from the strain, and the only factors which are allowed to select this race are time and the roughness of the Nebrodi's forests; the Sicilian black pig, is also called "Black Siciliano", and it is a native pig of the Nebrodi, Madonie, Etna's territory, in north-north eastern Sicily.

The Black Pig is not domestic, and its coat is black; there can also be two possible genetic variants "Facciola" and "Mirrina", the first has a white stain in front, the second is characterized by dark gray bristles.

Beef - Sicilian selection

Our suppliers adhere to organized and structured farms, where more than 1000 Sicilian cattles are bred, and carefully followed during their growth, with a serious program of sanitary control and balanced nutrition.

We refer to breeders of beef cattles, who try to maintain a high value of their products satrting from the selection of the best animals, which according to tradition, ensure a genetic selection, obtained exclusively with absolutely natural methods. The selection process is set up to protect the quality of the meat to offer the consumer a guaranteed and reliable product.

Bovine animals born and raised in Sicily, during their growth are constantly monitored and submitted to sanitary controls. Following the stages of development of each piece means garantee for consumers in the purchase of meat. The farming system as set ensures  a healthy and natural meat that has the classic features of the pink color, taste and tenderness.

Using selected fish

I use only fish subject to control, and whenever possible I prefer to buy it directly from the local fish market, since the territorial proximity from my laboratory, makes it available after just  a few hours it was caught.

I prefer for my products, swordfish, tuna, squid, shrimp, whose delicate flavor and consistence, also due to the absence of bones, makes them easier to use in my products. I also use frozen product, of which I am able to control the entire production chain: from the fishing site, the fishing fleet used, the process of cleaning and conservation, until transport in supply chains.

The traceability of the product used is fully guaranteed, even in maintaining unchanged the taste and nutritional properties.

Using local vegetables " zero Km"

I use selected vegetables,  directly purchased from local producers, at "zero Km". I believe in the chain of fair trade groups, I guarantee the availability of fresh, natural and seasonal produtcs, which in addition to being the best in terms of nutrition, are also the most delicious and tasty.

I strongly support organic farming and farmers that pursue it! I use selected and protected local vegetables, to safeguard our health by eating energitic food and not chemicals!
